Breakfast Potatoes

Ingredients

  • 2 Large Potatoes
  • Olive oil
  • 1 tbsp Salt
  • 1 tbsp Pepper
  • 1 tbsp Dried thyme
  • 1 tbsp Garlic powder
  • 1 tbsp Chili powder (optional)
  • 1 Green pepper (optional)
  • 1 Red pepper (optional)

Instructions

  1. Wash and cut potatoes into small cubes.
  2. (optional) Soak potatoes in cold water for 30 min, if time on hand, to remove excess starch and get potatoes extra crispy.
  3. Place a pan on medium heat, add some olive oil and throw in the potatoes. Mix for about a minute or so.
  4. Add salt, pepper, dried thyme, and garlic powder. (Chili powder too if you chose to use it.) Add/use less of each to your taste.
  5. Cook for 20-25 minutes, stir every 2-3 minutes; until potatoes are crispy on the outside.
