Breakfast Potatoes
Ingredients
- 2 Large Potatoes
- Olive oil
- 1 tbsp Salt
- 1 tbsp Pepper
- 1 tbsp Dried thyme
- 1 tbsp Garlic powder
- 1 tbsp Chili powder (optional)
- 1 Green pepper (optional)
- 1 Red pepper (optional)
Instructions
- Wash and cut potatoes into small cubes.
- (optional) Soak potatoes in cold water for 30 min, if time on hand, to remove excess starch and get potatoes extra crispy.
- Place a pan on medium heat, add some olive oil and throw in the potatoes. Mix for about a minute or so.
- Add salt, pepper, dried thyme, and garlic powder. (Chili powder too if you chose to use it.) Add/use less of each to your taste.
- Cook for 20-25 minutes, stir every 2-3 minutes; until potatoes are crispy on the outside.
