Mexican Scrambled Eggs
Ingredients
- 4 Eggs Large
- 1/4 cup Shredded cheese 45g
- 1/3 cup Black beans 65g
- 1/3 cup Brown rice 78g
- 3 tablespoons Salsa 48g
- 28 grams Cashews 1 ounce or 15 pieces
- 1/2 tablespoon Olive oil
Instructions
- Prepare the eggs, black beans, brown rice, cashews and olive oil in skillet. Top w/ shredded cheddar or Feta cheese and salsa.
