Mexican Scrambled Eggs

Ingredients

  • 4 Eggs Large
  • 1/4 cup Shredded cheese 45g
  • 1/3 cup Black beans 65g
  • 1/3 cup Brown rice 78g
  • 3 tablespoons Salsa 48g
  • 28 grams Cashews 1 ounce or 15 pieces
  • 1/2 tablespoon Olive oil

Instructions

  1. Prepare the eggs, black beans, brown rice, cashews and olive oil in skillet. Top w/ shredded cheddar or Feta cheese and salsa.
