Breakfast Strata

Ingredients

  • 1 1/2 pounds bulk country or breakfast sausage
  • 2 cups sliced mushrooms
  • 1/2 cup Finely chopped onions
  • 4 large eggs
  • 2 cups Milk
  • 1 loaf Italian bread day old
  • 2 cups grated swiss or cheddar cheese

Instructions

  1. 1. Butter a 2 1/2 quart souffle dish or casserole.
  2. 2. Heat a large heavy skillet over medium high heat and add sausage
  3. 3. Brown sausage for 5 minutes, breaking up with a fork as it cooks.
  4. 4. Add sliced mushrooms, and onions
  5. 5. Cook for 5 minutes, stirring frequently, then set aside.
  6. 6. Combine in a large bowl the eggs and milk
  7. 7. Cut Italian bread into 18 - 20 slices and remove crusts. Butter if desired.
  8. 8. Place a layer of bread on bottom of prepared baking dish.
  9. 9. Top with 1/2 the sausage mixture, and sprinkle with 1 1/2 cups of the grated cheese.
  10. 10. Repeat with another layer of bread, the rest of the sausage, and 1/2 cup of grated cheese.
  11. 11. Pour egg mixture over bread.
  12. 12. Let stand for at least one hour, or cover and refrigerate for 24 hours.
  13. 13. Preheat oven to 350 F.
  14. 14. Set baking sheet on the lowest rack of oven to catch any drips, and bake strata until nicely browned and bubbly, about 1 hour.
