Backyard Breakfast Egg Salad

Ingredients

  • 6 large eggs, hard-cooked
  • 2 tablespoons full-fat mayonnaise
  • 2 tablespoons plain 2% Greek yogurt
  • 2 teaspoons Dijon mustard
  • 4 slices cooked bacon, crumbled
  • 3 tablespoons finely chopped red onions
  • 1 tablespoon finely chopped fresh chives (or any herbs you like, I used dill)
  • 1/4 teaspoon salt
  • 1/4 teaspoon fresh ground black pepper
  • 4 pieces 100% whole-grain bread, toasted

Instructions

  1. 1. Chop the eggs.
  2. 2. Combine the mayonnaise, yogurt, mustard, bacon, red onion, chives, salt, and pepper. Gently stir in the eggs.
  3. 3. Spread on toast and serve.
