Breakfast Salad

Ingredients

  • 1 tbl spoon coconut oil
  • 200 g Mushrooms
  • 100 g tempeh (or poached egg)
  • 1 cup quinoa steamed
  • 2 handfuls Baby spinach

Instructions

  1. saute mushrooms in oil
  2. cook tempeh under grill or poach eggs
  3. mix all ingredients in bowl and dress.
