Holiday Breakfast Pleaser

Ingredients

  • 3/4 pounds ground sausage brown, drain, set aside
  • 1 TBS Butter
  • 4 Green Onions Chopped
  • 1/2 pound Fresh mushrooms Sliced
  • 10 Eggs beaten
  • 16 ounces cottage cheese
  • 1 pound Monterey jack cheese Shredded
  • 8 ounces (2 cans) diced green chile peppers drained
  • 1 cup flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon salt
  • 1/3 cup Butter melted

Instructions

  1. 1 Melt butter in skillet
  2. 2 Cook and stir green onions and mushrooms till tender
  3. 3 Mix eggs, cottage cheese, cheese, chiles in a HUGE bowl
  4. 4 Stir in sausage, green onions, and mushrooms
  5. 5 Cover and refrigerate overnight
  6. Next morning
  7. 1. Pre-heat oven to 350 degrees
  8. 2. Grease 9 x 13 pan
  9. 3. In bowl, sift flour, baking powder, and salt
  10. 4. Blend in melted butter
  11. 5. Stir flour mixture INTO egg mixture
  12. 6. Pour into pan
  13. 7. Bake 40 to 50 minutes
