Curried Egg Salad

Ingredients

  • 4 hard boiled eggs, peeled and chopped
  • 1 tablespoon dijon mustard
  • 2 tablespoons mayonnaise
  • 1/2 teaspoon curry powder, or more if desired
  • 1/2 teaspoon sea salt
  • 2 tablespoons chopped fresh chives or green onion
  • 3 cups baby spinach or mixed spring greens

Instructions

  1. 1. Combine the eggs, mustard, mayonnaise, curry powder, and salt in a medium bowl and mix well.
