Curried Egg Salad
Ingredients
- 4 hard boiled eggs, peeled and chopped
- 1 tablespoon dijon mustard
- 2 tablespoons mayonnaise
- 1/2 teaspoon curry powder, or more if desired
- 1/2 teaspoon sea salt
- 2 tablespoons chopped fresh chives or green onion
- 3 cups baby spinach or mixed spring greens
Instructions
- 1. Combine the eggs, mustard, mayonnaise, curry powder, and salt in a medium bowl and mix well.
- 2. Stir in the chives.
- 3. Serve the egg mixture over the spring greens.
