Southwest Cobb Salad with Chicken or Shrimp with Cilantro Dressing

Ingredients

  • 1 cup Romaine hearts chopped
  • 1 cup Cherry tomatoes sliced
  • 1 cup Avocado sliced
  • 1 cup Fire-roasted corn (Trader Joe’s)
  • 1 cup Bacon Bits (Costco)
  • 1 cup Blue Cheese or Shredded Cheese
  • 1 cup Hard boiled eggs Sliced
  • 1 cup Black beans
  • Tortilla Strips Salad Toppers
  • 1 cup Grilled Chicken or Shrimp Cubed
  • Cilantro Dressing
  • Handful Cilantro
  • 1-2 Garlic Cloves or Minced
  • 1/4 Cup Lime Juice
  • 1/2 cup Sour cream
  • 1/2 cup Mayonnaise

Instructions

  1. For a Salad Bar
  2. 1. Put each ingredient in a separate bowl.
  3. Cilantro Dressing
  4. Just throw a handful of cilantro and garlic in food processor.
  5. Add lime juice (about 1/4 cup)
  6. Add 1/2 cup sour cream
  7. Add 1/2 cup Mayo.
  8. Salt To taste.
