Creamy Scrambled Eggs

Ingredients

  • 5 large Eggs
  • 1/4 cup Heavy cream
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 1/8 teaspoon Ground nutmeg
  • 2 tablespoons Butter
  • 2 tablespoons Chives
  • 1/4 cup Swiss or Gruyere Cheese grated

Instructions

  1. In a large bowl whisk together eggs, cream, cheese, salt, pepper, and nutmeg. In a double boiler bring water to a boil and then reduce heat to a simmer. In the top pan pour in the eggs and cook stirring constantly. The eggs should cook very slowly and form creamy curds. Serve immediately garnished with chives.
