Crock Pot Breakfast Casserole

Ingredients

  • 1 bag (32 oz) Frozen hash brown potatoes
  • 1 pound Bacon or ham cooked, diced
  • 1 medium Onion diced
  • 1 medium Green bell pepper diced
  • 1 1/2 cup Cheddar or monterey jack cheese shredded
  • 12 Eggs
  • 1 cup Milk
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Instructions

  1. Spray inside of crock pot with Pam.
  2. place a layer of frozen potatoes on the bottom of the slow cooker, followed by a layer of bacon (or ham), then onions, green pepper and cheese. Repeat the layering process two or three more times, ending with a layer of cheese.
  3. Beat the eggs, milk, salt and pepper together. Pour over the crockpot mixture. cover and turn on low. Cook for 8 - 10 hours (do not overcook).
