Cobb Salad with Green Goddess Dressing
Ingredients
- 1/2 cup fat free yogurt
- 1/4 cup reduced fat mayo
- 4 tablespoon chopped green onion
- 3 tablespoon White wine vinegar
- 2 teaspoon anchovy paste
- 1 teaspoon chopped fresh tarragon
- 1 Garlic cloves minced
- 1 head Romaine
- 1 tomato chopped
- 1 Avocado diced
- 1/4 cup crumbled blue cheese
- 1 pound chicken tender cut into bite-sized pieces
Instructions
- Heat nonstick skillet over med-high heat. Add chicken. Cover and cook approximately 10 mins, until cooked through.
- Meanwhile, place all dressing ingredients in mini food processor. Process until smooth. Chill.
- Toss salad ingredients with dressing in small bowl.
