Cobb Salad with Green Goddess Dressing

Ingredients

  • 1/2 cup fat free yogurt
  • 1/4 cup reduced fat mayo
  • 4 tablespoon chopped green onion
  • 3 tablespoon White wine vinegar
  • 2 teaspoon anchovy paste
  • 1 teaspoon chopped fresh tarragon
  • 1 Garlic cloves minced
  • 1 head Romaine
  • 1 tomato chopped
  • 1 Avocado diced
  • 1/4 cup crumbled blue cheese
  • 1 pound chicken tender cut into bite-sized pieces

Instructions

  1. Heat nonstick skillet over med-high heat. Add chicken. Cover and cook approximately 10 mins, until cooked through.
  2. Meanwhile, place all dressing ingredients in mini food processor. Process until smooth. Chill.
  3. Toss salad ingredients with dressing in small bowl.
