Breakfast Casserole (S)

Ingredients

  • 1 lb. Sausage
  • 12 + 1 eggs lightly beaten
  • 1 cup of THM Baking Blend
  • 1 tsp Baking Powder
  • 1/3-1/2 c milk
  • 1/2 spTHM Sweet Blend
  • 1 tsp of Celtic Sea Salt
  • 1 tsp of black pepper (I use a lot more because I love p
  • 2 tsps. of Red Pepper Flakes (for a kick)
  • Less than 1/4 cup of water
  • 1 c cheese
  • 4 tsp. of melted butter

Instructions

  1. Mix baking blend, milk, sweetener, baking soda, and one egg together and set to the side. (You can add about a ½ tsp of salt and pepper to this mix if you want to add some spice and flavor to the topping)
  2. Cook sausage and rinse, drain, crumble, and cool. Sprinkle in a lightly greased 9x13 baking dish.
  3. Mix one dozen eggs with the remaining spices and water and pour over the sausage.
  4. Sprinkle cheese over egg mixture
  5. Pour baking blend mixture of the top and spread as much as you can.
  6. Pour melted butter on top-
  7. Bake at 350 for about 30-45 minutes, or until lightly browned.
  8. Optional: Veggies, mushrooms, other meats
