Scrambled Eggs with Lox (Smoked Salmon)

Ingredients

  • 1 tablespoon coconut oil
  • 1/2 small red onion chopped
  • 3 large Eggs
  • 2 ounces smoked salmon
  • Black pepper
  • 1 large tomato sliced
  • 1 tsp Capers
  • 1 tablespoon Fresh parsley chopped

Instructions

  1. Heat oil in a medium skillet and add onions. Cook until soft.
  2. Beat the eggs in a small bowl and add salmon. Season with pepper.
  3. Pour egg over onions and scramble.
  4. Top eggs with tomatoes and garnish with capers and parsley.
