Breakfast Burritos

Ingredients

  • 8 Eggs
  • 1/2 cup Greek yogurt (low fat)
  • Garlic
  • Salt
  • Fresh chives
  • 1 lb Ground chicken breast
  • 1 Taco seasoning packet
  • 4 tbsp Light mayo
  • 2 tbsp Sriracha Sauce
  • 4 Flour tortillas (Low calorie)
  • 1 cup Cheddar cheese (fat free)
  • 2 Green pepper (optional)
  • 2 Red pepper (optional)

Instructions

  1. Combine all 8 eggs into a bowl. Add 1/2 cup Greek yogurt, garlic, salt, chives, and mix it all together. Add to a pan on low heat and slowly scramble until fully cooked.
  2. Add 1lb of ground chicken breast to a pan along with 1 taco seasoning packet and cook on medium heat for 10 minutes. (Add peppers to this step if desired)
  3. Combine 4 tbsp of light mayo, 2 tbsp of Sriracha, and mix it all together until completely smooth.
  4. Lay out tortilla, add 1/4 of our eggs, 1/4 of our chicken, a quarter cup of cheddar cheese, and the Sriracha mayo sauce. Repeat for all 4 burritos.
  5. Toast all burritos on both sides until golden brown.
