Browns Mexicali Breakfast
Ingredients
- Chilli finely chopped
- 1 cup Beef stock
- 1 teaspoon Ground cumin
- 500 grams Ground beef
- 1 cloves Garlic crushed
- 2 tablespoons Tomato paste
- 1 handful Fresh coriander roughly chopped
- Salt & Pepper to taste
- 6 Eggs cooked however you like em
- 1 Avocado
- 2 Tomatoes cut into large chunks
- 4 tablespoons Greek yogurt (optional)
Instructions
- 1. Heat oil in a frying pan to a medium heat
- 2. Brown the beef
- 3. Add cumin, garlic, salt, pepper & chilli and fry for 5 min
- 4. Add stock and tomato paste and simmer until reduced by half (6-7 min)
- 5. Add salt coriander and turn down heat
- 6. Cook your eggs however you like
- 7. Serve mince topped with the eggs, tomato, avocado, tomato and yogurt (optional)
